The Extra Virgin Olive Oil "Pinzimolio" is first cold pressed from olives produced in the first part of the harvest, at partial ripening. "Pinzimolio" is bottled "mosto" (unfiltered, just as it comes from the mills), but can be filtered on request by the client.
