Moliterno al Vino is a Wine-aged Pecorino Cheese
This Italian cheese pairs well with fresh fruit and artisan bread on a cheese board.
Grate this pecorino sardo from Sardinia over salads to add a sharp, mildly fruity flavor.
Wine and cheese are a perfect pairing, and Central Moliterno al Vino Cheese combines them both in one delicious wheel! Produced by master cheese makers on the island of Sardinia, this semi-soft cheese is made from sheep's milk. The cheese is first aged in traditional straw baskets and then brought to Veneto where they are soaked with pomace (what remains of the grape after pressing). The result is a sweet, fruity cheese with an olive oil finish.
You can use this type of cheese as an alternative in recipes like cacio e pepe that call for pecorino romano or pecorino siciliano. Or enjoy it on a charcuterie board with salami, mortadella, and even other cheeses from Italy such as parmigiano reggiano. Pair with a bold glass of wine or a sweet cider.
