Cocciole - Shells Pasta by Riscossa
Cocciole, or shells, a pasta that will grab all your sauces. Perfect to make Shells with Broccoli.
Riscossa is the brand of pasta that Nonna Romana sold in her Bottega in Italy starting in 1945. Riscossa pasta is produced in Corato (about 20 miles away from our hometown Mola di Bari, Puglia) and is the brand of pasta that all Pugliesi love. I'm happy to continue Nonna Romana's tradition of making this pasta available in Delizioso Gourmet
The origins
The history of Riscossa begins in Corato, in Puglia, in 1902. It is here that Cavalier Leonardo Mastromauro founded the "Leonardo Mastromauro & Figli" pasta factory, a small family-run artisan business.
Soon, the quality of Mastromauro's pasta determined its fortune locally: by the end of the 1940s, the pasta factory's production reached the impressive figure of thirty quintals a day.
