Harvest is once a year during the summer with an aging process of 12 months minimum. Cooked grains of Basmati rice are characteristically free flowing rather than sticky, as with most long-grain rice. When cooked Basmati rice extends the length of its grain to approximately twice its original size. Cooked Basmati rice can be uniquely identified by its fragrance. Basmati rice is available in two varieties: white and brown. The name Basmati means "the fragrant one" in Sanskrit, but it can also mean "the soft rice," and the word coincidently means "my smile" in Arabic. India is the largest cultivator and exporter of this rice.
