Our Extra Virgin Olive Oil SAALGA IGP BELLA SICILIA comes from a careful selection of olives from all exclusively from the Sicilian territory and precisely from the provinces of Trapani and Palermo, the olives selected for this type of oil are exclusively Nocellara del Belice and Biancolilla, which are classified among the best oil olives in the world. To obtain the SAALGA IGP Sicily oil, the olives are harvested in the period between 10 October and 20 November in order to obtain an oil with exceptional organoleptic characteristics and very low acidity. Manual harvesting methods are also used and the oil is obtained no later than eight hours from the olive harvest, it is stored inside a stainless steel tank placed under nitrogen saturation and inside rooms at a controlled temperature in order to preserve its quality over time.
